  • 5 ears fresh corn (shucked)
  • 1 cup cherry tomatoes (halved)
  • 1 cup black beans (drained and rinsed)
  • 1 cup feta cheese (crumbled)
  • 1/2 cup red onion (finely diced)
  • 3 tablespoons fresh lime juice
  • 3 tablespoons olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup fresh herbs (basil, cilantro or flat parsley)

Instructions

  1. Blanch the corn in boiling water for 6 minutes; then cool in ice water.
  2. Cut kernels from the corn cobs using a sharp knife.
  3. Halve the cherry tomatoes and finely dice the red onion.
  4. In a large bowl, combine corn kernels, tomatoes, black beans, onion, and feta cheese.
  5. For the dressing, shake together lime juice, olive oil, honey, salt, and pepper in a small jar until well combined.
  6. Pour dressing over the salad ingredients and gently fold together.
  7. Refrigerate for at least 2 hours before serving for optimal flavor.
