  • 1/4 cup milk (whole, 2% or buttermilk preferred)
  • 1 1/2 cups raspberries (for frosting)
  • 1 cup unsalted butter (softened to room temperature)
  • 4 cups powdered sugar (sifted)
  • 1 tablespoon whipping cream (if needed)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, cornstarch, baking powder, and salt; set aside.
  3. In another bowl, cream together softened butter and sugar until light and fluffy.
  4. Add lime zest, vanilla extract, whole egg, and egg whites; mix until combined.
  5. Stir in fresh lime juice, sour cream, and milk until smooth.
