  • 8 oz penne or fusilli pasta
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup grated Gruyère cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat butter and olive oil in a large pot over medium heat. Add sliced onions and cook for 15-20 minutes until caramelized.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Deglaze the pot by adding a splash of beef broth, scraping up any browned bits.
  4. Add uncooked pasta, remaining beef broth, and dried thyme. Bring to a boil, then reduce heat and simmer uncovered for 10-12 minutes until pasta is al dente.
  5. Remove from heat and stir in grated Gruyère cheese until melted and creamy. Adjust seasoning if necessary.
  6. Serve hot, garnished with additional cheese or fresh parsley.
