  • 3/4 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 4 ounces cream cheese (softened)
  • 1/2 cup marshmallow fluff

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together oats, flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large mixing bowl, beat softened butter with both sugars until creamy. Add the egg and vanilla; mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Drop rounded mounds of dough onto prepared sheets, leaving space in between.
  6. Bake for 10-12 minutes or until edges are golden but centers remain soft. Cool on wire racks.
  7. For the filling, beat cream cheese with powdered sugar and marshmallow fluff until smooth.
  8. Once cookies are completely cool, spread filling between two cookies to assemble.
