Caprese Pasta Salad is a vibrant and refreshing dish that brings together the classic flavors of a Caprese salad with the heartiness of pasta.

Ingredients

  • 8 oz rotini or penne pasta
  • 1 cup ripe cherry tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 1 cup fresh basil leaves, torn
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine halved cherry tomatoes and torn basil leaves.
  3. Add cooled pasta to the bowl and gently toss to mix.
  4. Fold in mozzarella balls and drizzle with balsamic vinegar and olive oil; season with salt and pepper.
  5. Toss gently until well combined without breaking the mozzarella.
  6. Serve immediately or chill for an hour before serving.
