  • 1 large head green cabbage
  • 2 cups cooked rice or quinoa
  • 1 cup cooked lentils (brown or green)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups canned tomato sauce
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the cabbage by removing the core and blanching it in boiling water for about 5 minutes until the leaves soften. Peel off individual leaves carefully.
  2. In a large bowl, combine cooked rice or quinoa, lentils, onion, garlic, cumin, paprika, salt, and pepper; mix until well combined.
  3. Take one cabbage leaf, place about 2 tablespoons of filling at the base, and roll tightly while tucking in the sides.
  4. Preheat oven to 375°F (190°C). Spread a thin layer of tomato sauce on the bottom of a baking dish.
  5. Arrange rolls seam-side down in the dish and cover with remaining tomato sauce.
  6. Cover with foil and bake for 30 minutes; uncover and bake for an additional 10 minutes before serving.
