  • 4 ears fresh corn on the cob
  • 8 oz halloumi cheese
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat grill to medium-high heat (400°F/200°C). Clean and lightly oil grill grates.
  2. Grill corn for 10-12 minutes, turning occasionally until charred. Let cool slightly.
  3. Slice halloumi into thick pieces and grill for 2-3 minutes on each side until golden brown.
  4. Chop cherry tomatoes and cucumber; add to a large mixing bowl.
  5. Cut kernels off cooled corn cobs and add to the bowl.
