  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup favorite BBQ sauce
  • 4 cups mixed greens (such as spinach, arugula, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • ½ cup crispy bacon bits (optional)

Instructions

  1. Preheat grill to medium-high heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side until internal temperature reaches 165°F.
  2. While chicken grills, wash and chop mixed greens into bite-sized pieces. Halve cherry tomatoes and slice cucumber.
  3. In a large bowl, combine mixed greens, cherry tomatoes, cucumber slices, shredded cheese, and bacon bits if using.
  4. Once chicken is cooked, let it rest for a few minutes before slicing into strips. Add to the salad mixture.
  5. Drizzle BBQ sauce over the salad and toss gently for even coating.
  6. Serve on plates with additional BBQ sauce if desired.
