  • 1/2 cup balsamic vinegar
  • 1/4 cup Dijon mustard
  • 2 medium yellow onions, chopped
  • 3 medium carrots, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Season the chuck roast generously with salt and pepper.
  3. In a large oven-safe pot, heat olive oil over medium-high heat and sear the roast on all sides until browned (about 4 minutes per side). Remove from the pot.
