  • 1 medium onion
  • 1 jalapeno pepper
  • 1 red bell pepper
  • 3 ½ cups vegetable broth
  • 15 ounces tomato sauce
  • ¾ cup salsa
  • 1 cup corn
  • ¾ cup dried red lentils
  • 15 ounces black beans
  • 15 ounces red beans
  • 1 teaspoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne pepper (optional)
  • ½ cup light cream cheese

Instructions

  1. Dice the onion and red bell pepper. Drain and rinse black and red beans.
  2. In the crockpot, heat oil; add diced onion and jalapeno. Combine all ingredients: broth, tomato sauce, salsa, corn, lentils, beans, spices. Stir well.
  3. Cover and cook on low for about 6 hours or until lentils are tender.
  4. In the last 30 minutes of cooking, stir in cream cheese until melted.
  5. Serve warm and garnish with crushed tortilla chips.
