  • 1 tablespoon olive oil
  • 400g (approx. 1 lb) Italian sausage, without casings and chopped
  • 1 medium onion, finely chopped
  • 1 medium carrot, chopped
  • 2 celery stalks, chopped
  • 2 large garlic cloves, finely chopped
  • 1 teaspoon Italian herbs
  • 1/4 teaspoon red pepper flakes
  • 75 ml dry white wine (about 1/3 cup)
  • 1 litre chicken broth (4 cups)
  • 150 ml heavy cream (around 3/4 cup)
  • 500g gnocchi
  • A handful of fresh spinach leaves
  • 30g (about 1/4 cup) freshly grated parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, carrot, celery, and garlic until soft (about 5 minutes).
  2. Add chopped Italian sausage and cook until browned (5–7 minutes).
  3. Stir in Italian herbs and red pepper flakes; then add dry white wine and simmer for 2 minutes.
  4. Pour in chicken broth and stir well. Bring to a gentle simmer before adding heavy cream.
  5. Add gnocchi according to package instructions; cook until they float (2–3 minutes).
  6. Stir in fresh spinach until wilted and top with grated parmesan cheese before serving.
