  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 4 medium carrots, peeled and chopped
  • 2 stalks of celery, chopped
  • 1/2 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken stock
  • 1 cup cream or half and half
  • 1 lb potato gnocchi
  • 3 cups baby spinach

Instructions

  1. Prepare the Ingredients: In a large slow cooker, combine chicken, carrots, celery, onion, garlic, salt, pepper, and Italian seasoning.
  2. Add Broth: Pour chicken stock over the mixture and stir gently.
  3. Cook: Cover and cook on low for 6–8 hours or high for 4 hours until chicken is tender.
  4. Shred Chicken: Shred the chicken using two forks while still in the pot.
  5. Add Cream & Gnocchi: Whisk together cream and cornstarch; add to soup along with gnocchi and spinach. Stir well.
  6. Thicken: Cook on high for an additional 30–45 minutes until heated through.
  7. Serve: Ladle into bowls and garnish as desired.
