  • 4 medium-sized sweet potatoes
  • 1 cup fresh cranberries
  • 2 medium apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce each sweet potato with a fork, wrap in aluminum foil, and place on a baking sheet.
  3. Bake for 45-60 minutes until tender.
  4. While baking, rinse cranberries and chop apples. Mix these with brown sugar, cinnamon, butter, and salt in a bowl.
  5. Once baked, unwrap sweet potatoes, slice in half, and scoop out most flesh into another bowl.
