  • 6 cups vegetable stock (or chicken stock)
  • 1 cup uncooked wild rice
  • 8 ounces baby bella mushrooms, sliced
  • 1 large sweet potato, peeled and diced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 1 small white onion, diced
  • 2 large handfuls of kale, roughly chopped
  • 1 (14-ounce) can unsweetened coconut milk
  • Old Bay seasoning

Instructions

  1. Prepare all vegetables by washing and chopping them.
  2. In a large pot, combine vegetable stock and wild rice. Bring to a boil then reduce heat to low and simmer for about 30 minutes until rice is tender.
  3. Meanwhile, sauté onions in a separate pan until translucent. Add garlic and cook for another minute.
  4. Stir in mushrooms, carrots, celery, and sweet potato; cook until softened.
  5. Combine sautéed vegetables with the cooked wild rice in the pot. Add bay leaf and Old Bay seasoning; stir well.
  6. Pour in coconut milk; season with salt and pepper to taste.
  7. Cover and let simmer on low heat for an additional 10-15 minutes before serving.
