  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled (optional)
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a medium bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, salt, and pepper.
  2. Marinate the flank steak in the mixture for at least 30 minutes (preferably 2 to 4 hours).
  3. Cook rice according to package instructions.
  4. Warm black beans in a saucepan until heated through.
  5. Preheat your grill to medium-high heat.
  6. Grill the marinated steak for about 4-5 minutes per side for medium-rare doneness.
  7. Let the steak rest before slicing it against the grain into strips.
  8. Assemble bowls starting with rice as a base, topped with black beans, corn, sliced steak, avocado, and feta if desired.
