  • 1 cup all-purpose flour
  • 1/2 cup butter (room temperature)
  • 1.5 cups finely chopped pecans (divided)
  • 8 oz cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 tubs (8 oz each) Cool Whip (thawed)
  • 2 small boxes instant chocolate pudding
  • 3 cups milk

Instructions

  1. Preheat oven to 325°F.
  2. For the crust: Mix flour, butter, 1 cup pecans, and salt until combined. Press into a 13×9-inch baking dish and bake for 25-30 minutes until lightly browned. Cool completely.
  3. For the cream cheese layer: Blend cream cheese and powdered sugar until smooth. Fold in half of the Cool Whip and spread over the cooled crust.
  4. For the chocolate layer: Combine chocolate pudding mix with milk and whisk until thickened. Spread over the cream cheese layer.
  5. Top with remaining Cool Whip and sprinkle with remaining pecans.
  6. Chill for at least two hours before serving.
