  • 1 to 1.5 lbs chicken breasts
  • 1/4 cup lime juice
  • 2 tbsp canola oil
  • 1 tsp jalapeno (minced)
  • 1 tsp honey
  • Taco flour tortillas
  • Fresh cilantro (chopped)
  • Avocado (chopped)

Instructions

  1. In a Ziplock bag, combine half the lime juice with canola oil, jalapeno, honey, salt, and spices. Add chicken breasts, seal the bag, and toss to coat. Marinate for at least 30 minutes.
  2. Cook the marinated chicken in a non-stick skillet over medium-high heat for about 10-15 minutes until fully cooked (internal temperature of 160°F). Let rest before slicing.
  3. Sauté corn and black beans in olive oil with chopped red onion until heated through.
  4. Assemble tacos by filling tortillas with sliced chicken and sautéed mixture. Top with avocado and cilantro.
