  • 34 boneless, skinless chicken breasts
  • 2 cloves fresh garlic
  • Juice of 2 fresh lemons
  • 1 can or 1 cup frozen artichoke hearts
  • 2 tablespoons capers
  • 1 cup low-sodium chicken broth
  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  2. In the same skillet, lower heat and sauté minced garlic for about 1 minute until fragrant.
  3. Add lemon juice, chicken broth, Dijon mustard, capers, and artichokes to the skillet. Simmer for 3 minutes.
  4. Return chicken to the skillet, spoon sauce over it, and simmer for an additional 5 minutes.
