  • 1 bulb garlic
  • 6 strips bacon (chopped)
  • 2 tablespoons unsalted butter
  • 2 cups whole milk
  • 12 ounces sharp cheddar cheese (shredded)
  • 45 medium Yukon gold potatoes (peeled and thinly sliced)

Instructions

  1. Preheat oven to 400°F. Slice the garlic bulb tops, drizzle with olive oil, wrap in foil, and bake for 30-35 minutes until soft.
  2. Lower oven temperature to 375°F. Grease a 9×13 inch baking dish.
  3. Cook chopped bacon in a skillet over medium heat until crispy. Set aside, reserving some fat.
  4. In the same skillet, melt butter with reserved bacon fat, whisk in flour to create a roux for 1–2 minutes.
  5. Gradually add milk while whisking until thickened. Stir in roasted garlic, spices, and cheese until creamy.
  6. Layer sliced potatoes in the baking dish, pour sauce over them, sprinkle crumbled bacon on top.
  7. Cover with foil and bake for 45 minutes; uncover, add more cheese, bake for another 15–20 minutes until golden.
