Chai Panna Cotta with Pistachio Toffee is a luxurious dessert that marries the creamy texture of traditional Italian panna cotta with the warm, aromatic spices of chai.   • 1 ¾ cups whole milk, in 2 parts
  • 6 chai tea bags, good quality
  • 2 cloves
  • 1 stick cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon allspice
  • 3 teaspoons powdered Vegan Gelatine (unflavoured)
  • ⅓ cup white granulated sugar
  • 1 ½ cups thickened (heavy) cream
  • 1 teaspoon vanilla extract
  • pinch of salt
  • ¼ cup white granulated sugar for pistachio toffee
  • 1 tablespoon water for pistachio toffee
  • 1 tablespoon pistachios, roughly chopped

Instructions

  1. In a saucepan, heat whole milk with chai tea bags and spices until steaming. Let steep for 10 minutes.
  2. Bloom vegan gelatine in water for 5 minutes.
  3. Remove spices from milk, whisk in gelatine until dissolved, then add sugar, heavy cream, vanilla extract, and salt.
  4. Pour into serving glasses and refrigerate for at least 4 hours to set.
  5. For pistachio toffee, cook sugar and water until golden brown; stir in chopped pistachios and cool on parchment paper.
  6. Once set, top panna cotta with pistachio toffee before serving.
