  • 1/3 cup balsamic vinegar
  • 3 tablespoons honey
  • 1 shallot, chopped
  • 3 cloves garlic, chopped
  • 2 tablespoons chopped fresh oregano
  • 2 tablespoons chopped fresh basil
  • kosher salt, to taste
  • black pepper, to taste
  • red pepper flakes, to taste
  • 1 pound boneless skinless chicken tenders
  • 1 pound short cut pasta
  • 2 cups mozzarella balls
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves, torn
  • 1 avocado, diced

Instructions

  1. Prepare the dressing by combining all dressing ingredients in a glass jar and whisk until smooth.
  2. Marinate the chicken tenders with a portion of the dressing for at least 10 minutes.
  3. Grill the marinated chicken over medium-high heat for 8–10 minutes until cooked through.
  4. Cook pasta according to package directions until al dente; drain well.
  5. In a large mixing bowl, combine cooked pasta, grilled chicken, mozzarella balls, halved cherry tomatoes, diced avocado, and torn basil leaves. Pour over remaining dressing and toss to combine.
  6. Serve warm or chilled for best flavor.
