  • 1 ⅓ cups long-grain white rice
  • 2 ⅔ cups chicken broth
  • 4 tablespoons butter (divided)
  • 1 teaspoon minced garlic
  • 1 pound large shrimp (peeled and deveined)
  • 1 ½ teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon cracked black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon crushed red pepper flakes

Instructions

  1. In a small bowl, whisk together all Cajun seasoning ingredients until well combined.
  2. In a large skillet over medium heat, melt 2 tablespoons butter and add minced garlic and half of the Cajun seasoning. Stir in the rice until coated.
  3. Pour in the chicken broth and bring to a boil. Reduce heat to simmer, cover, and cook for about 15 minutes.
  4. Meanwhile, mix remaining melted butter with leftover Cajun seasoning and toss shrimp to coat.
  5. Once the rice is cooked, stir in the shrimp mixture. Cover and cook for an additional 3-5 minutes until shrimp are pink and opaque.
