  • 1 cup (226g) unsalted butter
  • 3 cups (333g) cake flour
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) light brown sugar, firmly packed
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 ½ cups (354ml) buttermilk, room temperature preferred
  • 2 large eggs, room temperature preferred
  • 1 ½ tsp vanilla extract
  • 1 ½ cups (160g) pecan halves, very finely chopped
  • 1 ½ cups (340g) unsalted butter, softened
  • 6 oz cream cheese, softened
  • ⅓ cup (66g) light brown sugar, firmly packed
  • ¼ tsp salt
  • 4 ½ cups (562g) powdered sugar
  • 1 tbsp heavy cream
  • ⅓ cup (35g) pecan halves, very finely chopped, optional

Instructions

  1. Brown the butter over medium-low heat until golden specks form. Let cool.
  2. Preheat the oven to 350°F (175°C) and prepare three 8-inch round cake pans with grease and parchment paper.
  3. In a bowl, whisk together cake flour, sugars, baking powder, baking soda, and salt.
  4. Combine cooled browned butter with dry ingredients using an electric mixer.
  5. Mix buttermilk, eggs, and vanilla; gradually add to the batter until just combined. Fold in chopped pecans.
  6. Divide batter among pans and bake for about 30 minutes or until a toothpick inserted comes out clean.
  7. Prepare icing by mixing softened butter and cream cheese; gradually add brown sugar, vanilla, salt, and powdered sugar until fluffy.
  8. Level the cooled cakes if necessary and assemble with icing between layers and on top.
