  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, whisk together cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until smooth. Stir in chocolate chips.
  4. Gradually add dry ingredients to wet ingredients and mix until just combined.
  5. Prepare an 8" x 4" loaf pan with oil spray and pour the batter into it.
  6. Top with remaining chocolate chips and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
