  • 16 ounces potato gnocchi
  • 2 cups fresh baby spinach
  • ½ cup half-and-half
  • ½ cup Asiago cheese, finely grated
  • 5 tablespoons unsalted butter
  • 1 medium shallot, diced
  • 1 teaspoon garlic, minced
  • 2 cups chicken broth

Instructions

  1. Season chicken breasts with salt and pepper. In a non-stick skillet, melt 2 tablespoons of butter over medium heat and cook the chicken for 8-10 minutes until fully cooked. Remove and keep warm.
