  • 4 lbs chopped apples (about 16 cups when peeled, cored, and diced)
  • 4 cups granulated sugar
  • 1/2 cup lemon juice

  1. In a large bowl, combine diced apples, sugar, and lemon juice. Mix gently and refrigerate for at least 4 hours or overnight to allow flavors to meld.
  2. Preheat your cooking area by placing a small plate in the freezer for gel testing.
  3. Strain the macerated fruit mixture, reserving the liquid. Boil the reserved liquid in a saucepan.
  4. Once boiling, add back the apple pieces and cook over medium-high heat for 20-30 minutes, stirring occasionally until thickened.
  5. To test for consistency, use the frozen plate method: Place a small amount of jam on it and return to the freezer for 1 minute. If it wrinkles when pushed with your finger, it's ready.
  6. Fill sterilized jars with hot jam while leaving a 1/4-inch headspace. Process in a water bath canner for 10 minutes to seal.
