  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • 1/4 cup sour cream
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups panko breadcrumbs

Instructions

  1. Boil peeled and quartered potatoes in salted water until fork-tender (about 15-20 minutes). Drain well.
  2. Return potatoes to pot, mash until smooth. Mix in milk, butter, sour cream, salt, pepper, and optional garlic powder.
  3. Cool the mixture in the fridge for 30-60 minutes.
  4. Set up a dredging station with flour, beaten eggs, and panko breadcrumbs mixed with seasonings.
  5. Form cooled potato mixture into balls, rolling first in flour, then egg, and finally coating with breadcrumbs.
  6. Preheat air fryer to 400°F (200°C) and spray basket with cooking spray. Arrange potato balls in a single layer.
  7. Air fry for 8-10 minutes until golden brown.
